Vanilla Poke Cake

I just wanted to share a quick, easy, and delicious dessert!  It’s my mom’s recipe, so that automatically makes it good. 😉  And it only takes a few ingredients, which makes it even better!

Ingredients

  • Yellow or white boxed cake mix (and whatever ingredients that calls for – oil, eggs, etc.)
  • 1 small can sweetened condensed milk
  • 1 tub Cool Whip
  • Topping of your choice (1 bag coconut flakes, berries, etc.)

Prepare and bake the cake in a 13 x 9 pan according to the box’s instructions.  Once it’s cool, use the end of a wooden spoon to poke holes all over the cake.  The more holes, the more the sweetened condensed milk will soak all through the cake.  Drizzle the sweetened condensed milk all over the top of the cake.  Cover and refrigerate for at least an hour or two.

After the sweetened condensed milk has soaked in, smooth the tub of Cool Whip over the top of the cake.

Next, use the topping of your choice.  I think it’s delicious with coconut flakes on top, and that’s how my mom made it when I was growing up.  [I left a portion of the cake without any topping for my coconut-averse husband.]

You could also use berries as a topping.  I made this flag design for July 4th a couple of years ago.  Easy and cute!

Store the cake in the refrigerator.  I think this cake is best if made the day before it will be eaten, so it can get nice and moist.
