It’s summer, and I’ve already started crossing a few things off our summer bucket list. One of the first items to get crossed off – making homemade popsicles. These creamy lime popsicles were pretty simple to make, delicious, and healthy to top it all off, so I just had to share (recipe from SuperHealthyKids.com)!
Recipe for Homemade Creamy Lime Popsicles
Ingredients:
- 1 1/2 cups pineapple (fresh or frozen)
- 1/2 banana
- 3/4 cup coconut milk (I used almond milk because I already had it on hand)
- 1/2 – 1 cup spinach
- Zest and juice of 1 lime
Directions: Puree all ingredients in a blender until completely smooth. Pour into your favorite popsicle mold and freeze 3-4 hours, or until completely solid. Makes 5-6 popsicles.
These popsicle molds are medium-sized, so I poured the extra into 4 small paper Dixie cups. If you wait until the Dixie cups have been in the freezer for about 20-30 minutes and are getting slushy, you can stand a wooden popsicle stick in it straight.

The kids loved these homemade popsicles, and because I let the blender run for about 30 seconds until everything was pureed very well, they couldn’t even tell there was spinach in them! And the lime flavor was refreshing on a hot day. Honestly, this recipe would probably make some delicious adult beverages with a little something extra added…wink, wink!
